Vintage: 2025

Grapes: Savagnin and Optima (Hayfield Farm), Frontenac Gris (Sœurs Racines), Adalmiina, Itasca, Roland, Louise Swenson (hybrid variations from Hayfield Farm).

Planting: 2019.

Winemaking: long carbonic maceration of 14 days on the hybrids.

Direct press on the vinifera.

No added sulfites.

Aging: 7 months in 500L demi-muid barrels.
