2023 SAUCETTE

The first bubbles from Sœurs Racines. We wanted a beautiful silky, fine bubble with just enough fruit!

Vintage: 2023

Grapes: Blend of Chardonnay and Pinot Noir (Hayfield Farm and Sœurs Racines).

Planting: Chardonnay (2019), Pinot Noir (2021).

Winemaking: Pétillant Naturel. Direct press for the Chardonnays. 10 days of carbonic maceration for the Pinot Noirs, hand destemming, and 4 days of skin maceration before pressing.

No added sulfites.

Aging: 6 months on lees before disgorgement.

Disgorgement: May 2024.
